Fennel has long been considered good for digestion, and fennel tea is a popular after-dinner drink in some parts of the world. Proper Italian sausage demands fennel seeds, which are also commonly found in fish dishes. It’s used in curing mix for salmon or bluefish and it is also sometimes added to cheese.
Fennel is said to have been used to stop and prevent stomach cramps, as well as helping congestion from colds flus, for a recorded 1000 years in India, Persia and Europe.
The name Fennel comes from the Latin foeniculum, meaning “little hay”. Several liquors are flavored with fennel, including aquavit, gin, absinthe and fennouillete. The above– ground parts of the fennel plant are all edible.
Fennel “seeds” are actually whole fruits, the most aromatic seeds are found in the center of the seed head. These seeds are very rich in minerals including magnesium. In seed, a bright green color indicates quality. The herb is best stored in a tightly closed container in a dry, cool place.
Fennel can be used in soups, sauces, shakes, and bakes. Fennel may be also had as a tea. For this, boil about 3 gms. (1/2 teaspoon) of powder in 250 ml. of water. Let the water boil for about 5 minutes while keeping the pot covered. Cool the mixture and then sip as required. Two to three cups may be had daily in this manner.
